  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • ⅔ cup water
  • 1 (10-ounce) can Rotel tomatoes with green chiles, drained
  • 1 (15-ounce) can nacho cheese sauce (optional for extra creaminess)
  • 1 (32-ounce) bag frozen tater tots
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded sharp cheddar cheese
  • Salt and black pepper, to taste
  • Cooking spray

For Topping

  • Sour cream
  • Pico de gallo
  • Chopped fresh cilantro
  • Sliced green onions
  • Diced avocado (optional)
  • Pickled jalapeños (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned. Drain any excess grease.
  3. Stir in the garlic and cook for 30 seconds until fragrant.
  4. Add the taco seasoning, water, and drained Rotel. Simmer for 5 minutes until slightly thickened.
  5. Stir in the nacho cheese sauce if using and mix until well combined.
  6. Spread the taco beef mixture evenly into the prepared baking dish.
  7. Arrange the frozen tater tots in a single layer over the beef mixture.
  8. Bake for 25 minutes until the tater tots are beginning to turn golden.
  9. Remove the casserole from the oven and sprinkle evenly with the Mexican blend cheese and cheddar cheese.
  10. Return to the oven and bake for an additional 10–15 minutes, or until the cheese is melted and bubbly and the tater tots are crispy.
  11. Let the casserole rest for 5 minutes before serving.
  12. Top with sour cream, pico de gallo, chopped cilantro, sliced green onions, diced avocado, and pickled jalapeños if desired.

Variations

  • Swap the ground beef for ground turkey, shredded chicken, or chorizo for a different flavor profile.
  • Add a layer of seasoned black beans or pinto beans for extra protein and heartiness.
  • Use Pepper Jack cheese for a spicier, creamier topping.
  • Drizzle with queso, chipotle ranch, or spicy salsa before serving for even more Tex-Mex flavor.

Tips

  • Bake the tater tots until deeply golden for the crispiest texture.
  • Drain the beef well after browning to prevent the casserole from becoming greasy.
  • Let the casserole rest for a few minutes before serving so it slices and serves more easily.
  • Garnish just before serving to keep the fresh toppings vibrant and the tater tots perfectly crisp.
